The kitchen is a hierarchy, not the word “chef”

A cook plates food that is safe, on time, and the same taste twice. “Chef” in an ad sometimes just means a line cook; the head chef owns the menu, food cost, and the crew. Path: helper → line → sous → head.

Uzbekistan often shows four kitchens: national/banquet (qozon, feast), restaurant (à la carte), hotel (breakfast + banquet), QSR (standard, seconds). Each has different feet and a different kind of “creativity.”

A fit: heat, a crew, repetition. A poor fit: only slow solo plating and running from the evening shift.

The line cook sees portion and waste. The head chef owns grams, suppliers, and menu balance. “Throw a bit more on” sinks a kitchen. An AI recipe does not see Tashkent market prices — you weigh.

Culinary school and the shift

School can give hygiene, mother sauces, French words. It does not give the voice of a shift. Many Tashkent kitchens hire on “come, wash, show.” A diploma helps more in a hotel chain; banquet halls ask less often.

Do not drop a foreign “Michelin path” onto a local ad. Stand six months in one kitchen first.

Kitchens abroad

A hotel chain sometimes offers an internal move — language, visa, medical rules are that country’s. Do not convert a “European cook wage” at the FX rate. There is no relocation how-to here. Earn trust on a local line first.

Burnout and myths

Food is not disappearing. Risks: hours, back, heat, always-open culture. Myths: “10M with no school”; “AI replaces cooks”; “your own café is easy.” A place of your own is a business plan — another handbook.
